
Dengzhan Gao (Oil-Lamp Cake). Named for its resemblance to the shallow dish of ancient oil lamps. A rice batter is poured into a flat, long-handled iron ladle, loaded with shredded radish (sometimes with pork), sealed with another layer of batter, and deep-fried ¡ª ladle and all ¡ª in hot oil until golden. The crust turns shattering-crisp while the rim stays tender, the fresh radish cutting through the richness of the fry. The only proper way to eat it is piping hot, fresh out of the wok. Listed among the city's "top ten must-try snacks."
