
Tall Man Wontons (Changren Hundun). A century-old Wenzhou institution dating back to the late Qing dynasty, named after its unusually tall founder. The wrappers are hand-rolled as thin as tissue; the filling is seasoned lean pork. The bowl is prepped with seaweed, shredded egg crepe, dried shrimp, and pickled mustard greens before the wontons and clear hot broth are ladled in. A local nursery rhyme goes: "Be good, little one, and Mama will buy you wontons." The original shop has earned a Michelin Bib Gourmand nod. Served at: breakfast, snack, late night.
