Wenzhou Snacks：Tall Man Wontons (Changren Hundun). - The Hands Behind Wenzhou's Culinary Heritage

Ou Cuisine is built on seafood, light oil, delicate thickening, and meticulous knife work. These ten signature dishes showcase its culinary mastery — pounded fish consommé, scallion-oil croaker, mud crab with egg white — and ten more snacks embody its vibrant street culture, from fish balls that are decidedly not round to the bowl of glutinous rice the city wakes up to.

Tall Man Wontons (Changren Hundun). A century-old Wenzhou institution dating back to the late Qing dynasty, named after its unusually tall founder. The wrappers are hand-rolled as thin as tissue; the filling is seasoned lean pork. The bowl is prepped with seaweed, shredded egg crepe, dried shrimp, and pickled mustard greens before the wontons and clear hot broth are ladled in. A local nursery rhyme goes: "Be good, little one, and Mama will buy you wontons." The original shop has earned a Michelin Bib Gourmand nod. Served at: breakfast, snack, late night.
