
Stir-Fried Rice Noodles (Chao Fen Gan). This dish is all about "wok hei" ¡ª known in the Wenzhou dialect as "the breath of the fire." Fine rice noodles are soaked, drained, and tossed over high heat with pork shreds, egg, dried shrimp, and cabbage. The pan must sizzle loudly as the noodles are tossed; that sound is the ultimate test of authenticity. It often arrives before the main courses at gatherings to take the edge off guests' hunger.
