
Pounded Fish Consomm¨¦ with Three Shreds (San Si Qiao Yu). Fresh fish fillets are sliced thin, dusted with starch, and pounded with a wooden mallet into translucent, paper-thin sheets. These are poached, cut into strips, and simmered in a clear broth with the "three shreds" ¡ª chicken breast, ham, and shiitake ¡ª alongside leafy greens. The soup is pristine, the fish velvety. One of the "Three Treasures of Ou Cuisine," it boasts a history of over a century and was named one of Zhejiang's ten classic dishes in the 2018 national "Chinese Cuisine" program.
