Steamed Mud Crab with Egg White (Furong Youmou). "Youmou" is the local dialect for the green mud crab. The meat and roe are extracted, gently folded with whipped egg whites, and stir-fried or steamed into a white-and-gold "hibiscus" blossom; alternatively, the whole crab is steamed with beaten egg drizzled over it. At its fattest around the Autumn Equinox, this is the definitive crab dish of the Ou banquet table, earning a spot among the "Top Ten Hot Dishes of Ou Cuisine" in 2021.
