Flash-Fried Cuttlefish Blooms (Bao Mo Yu Hua). Fresh cuttlefish is scored in a crosshatch pattern, cut into pieces, and briefly blanched so the cuts curl open into intricate "blooms." It is then flash-fried over high heat and coated in a glossy glaze. Another of the "Three Treasures," it exemplifies Ou Cuisine's mastery of knife and fire; Chef Jin Cifan's presentation of this dish drew applause from judges at the 1983 national competition.
