Three rigorous steps govern its production: selecting fresh lean pork from the hind leg with nearly a third of the connective tissue hand-trimmed; rhythmically pounding the meat 8,000 times using a two-catty (approx. 1 kg) wooden mallet while maintaining the temperature around 18¡ãC; and working the paste with sweet potato and lotus root starches through rolling, pressing, and folding to yield translucent wrappers thin as rice paper. Inheritor Zhu Shiqin assumed stewardship of the family enterprise in 1982, guiding the craft onto county, municipal, and, in 2022, provincial heritage rosters. A 2025 regional industry standard for frozen meat swallow elevated the local sector's annual output beyond 350 million yuan, employing over 1,000 workers.

Wenzhou Fish Balls (Wenzhou Yuyuan). The city's most iconic street food utilizes fresh yellow croaker scraped into a fine paste, seasoned with starch, minced ginger, scallion whites, and salt, whipped until gelatinous, hand-plucked into freeform strips, and poached in boiling water until floating ¡ª served in a clear broth with rice vinegar and white pepper. Its irregular, textured form serves as its authentic signature. Inscribed in 2023 on Ouhai District's eighth heritage batch, the "Fuqi Yuyuan" (Husband and Wife Fish Balls) establishment joined the Michelin Guide's Selected venue list in 2026.

Oil-Lamp Cake (Dengzhan Gao). A municipal-level heritage snack taking its name from traditional oil lamps. Rice and soybean batter is ladled into a round iron mold, layered with shredded radish, minced pork, and chopped scallions, sealed with top batter, and deep-fried mold-and-all into a golden disc with crisp borders. Fourth-generation inheritor Chen Zhengmo (born in the 1990s) stepped away from corporate employment to preserve the establishment his father founded on Jiefang Street in 1997, introducing modern flavor variations to expand the snack's reach beyond regional borders.

Yongjia Wheat Cake (Yongjia Maibing). The historical staple of the Nanxi River valley comprises hand-kneaded dough encased around preserved mustard greens and pork belly, rolled flat, and pan-roasted or baked to a golden crust. Master practitioner Wang Yongliang has dedicated over three decades to the craft; in 2025, he was appointed a municipal representative inheritor for this provincial-level craft, conducting over twenty educational workshops, receiving the Zhejiang Traditional Food Gold Award at the 2023 heritage expo, and earning the "Most Distinctive Award" at the 2025 International Meat Pie Competition.

Wenzhou Wheat Strips (Wenzhou Maitiao'er). A traditional comfort food focused on highlighting pure wheat character, cooked alongside dried field-cultivated carp, soy-marinated pork, and bottle gourd. Crafting the noodles demands timing during dough resting and heat control for the broth; uneven slapping yields rough edges, while hasty stretching snaps the strands. Master Wu Shunhui has spent over forty years preserving local snacks, digitizing procedural workflows in 2016, training over ten apprentices, and delivering public instructional courses at Wenzhou Technician College.
