
Thousand-Layer Cake (Qianceng Gao). A festival rice cake native to the Nanxi River region, made by burning early-rice straw into ash, filtering the lye water to soak japonica rice, milling it into smooth batter, and steaming it layer upon layer across nine or ten pours. Once cooled and firm, it is sliced into diamond portions and enjoyed with soy sauce and vinegar. Inscribed in 2014 on the eighth municipal heritage list, its transmission endures through domestic kitchens and seasonal markets rather than single designated masters.
Haicheng Ash-Soaked Rice Dumplings (Haicheng Huitang Zong). Longwan's seasonal dumpling features glutinous rice steeped in lye water extracted from burned early-rice straw, wrapped in bamboo leaves, and boiled to produce lustrous amber grains infused with a faint smoky fragrance. Inscribed in 2024 on Longwan's twelfth heritage list, it continues to be produced by neighborhood shops during the Dragon Boat Festival.
